“Casaliva” is a rare indigenous variety that grows in the most northern part of olive oil cultivation region. Many of the Casaliva olives are harvested early and processed immediately with cold extraction techniques to not alter the properties of the olives, resulting in a pure and exceptionally fresh oil.
