What is “Denocciolato"?

“Denocciolato” in Italian means “without pit”, so these oils are made after taking off the pit from the olive so the juice comes only from the olive and not from its seed. If we look at the parameters on extra virgin olive oils defined by the IOC (International Olive Council), we can easily see that denocciolato deserves to be described as one of the finest extra virgin olive oils.

What are the characteristics of "Denocciolato"?
